Watermelon Mint Iced Tea using Birchall Green Tea & Mint
Ingredients:
4 Birchall Green Tea & Mint tea bags
1 litre just-boiled water
2–3 cups fresh watermelon (cubed, deseeded)
Juice of half a lime (optional, for brightness)
1–2 tbsp maple syrup (optional, to taste)
Ice
Fresh mint and extra watermelon wedges for garnish
Method:
Brew the tea
Add 4 mint tea bags to 1 litre of just-boiled water. Let steep for 5–7 minutes depending on your preferred strength. Remove tea bags and let cool slightly.Sweeten (optional)
Stir in sweetener while the tea is still warm. Let cool to room temperature.Blend the watermelon
In a blender, blitz the watermelon cubes until smooth. Strain through a fine sieve or muslin cloth if you want a clearer tea (or leave it pulpy for extra texture).Mix it all together
Combine the cooled mint tea, watermelon juice, and a squeeze of lime in a large jug. Stir well and chill in the fridge for at least 1 hour.Serve
Pour over ice and garnish with extra watermelon chunks and fresh mint leaves. Optional: top with a splash of sparkling water just before serving.
