Makes:        4

Prep Time:   10 minutes

Cook Time: 30 minutes

Ingredients:

·       2 Apples, (Bramley, Granny Smith), cored

·       100g Blackberries – 50g for the stuffing mix, reserving half for the rest of the dish

·       1 tbsp Sultanas or Raisins

·       2 balls Opies Stem Ginger, finely chopped, plus 2 tbsp syrup from the jar

·       4 pieces Opies Crystallised Ginger, finely chopped

·       2 tbsp Light Brown Sugar

·       Pinch of Ground Cinnamon (optional)

·       1 tbsp Unsalted Butter

·       2 tbsp Water

Method:

1.     Preheat the oven to 190°C, Fan 170°C, Gas 5.

2.     Using a corer or small knife, partially core the apples, about 3/4 of the way through. Make sure the base is uncored.

3.     Cut the base of the apples to ensure they sit upright when baked.

4.     Combine all the stuffing ingredients into a bowl and mix well. Stuff the cored apples with the filling.

5.     Place upright in a baking tray, so they fit snugly. Pour around 60ml of water into the base of the baking dish, adding the remaining blackberries.

6.     Cover loosely with foil and bake for 15-20 mins. Remove the foil and bake for another 10 mins or until cooked through.

7.     Spoon over any berry juices

8.     Serve drizzled with the ginger syrup, and double cream or custard.
